Vertical Roaster: A New-Fangled Cooker FARM HOME Food 3-2-27 Latest in kitchen gadgets is a vertical roaster rack that stands chickens straight up in the oven. You simply plunk a chicken or other bird on the wire rack, then replace the center ring that,, goes on top. Put the whole thing in a baking pan to catch drips, add a little water and place in a preheated conventional oven to roast. There's a little perforated tray that fits over the top in which you can put butter or other basting material for automatic self-basting.
"By standing the bird in the oven, it cooks evenly all the way around," says Denis Spanek, inventor. "It speeds up normal cooking time by about 40%. The tempered steel rack is designed to act as a heating element which cauterizes the inside of the bird and also traps the natural juices. The flavor is changed drastically because the natural juices are trapped in the bird from the searing. They have nothing to do but bubble in the meat, creating a tenderizing effect." Suggested retail for the Vertical Roaster kit is $16, including basting tray and 8 skewers.
