The first time you do it it seems like a lot of work but after a couple times it becomes much easier," says Angelina Hoogmoed, Beausejour, Manitoba, who's developed cheesemaking kits and supplies that let even the novice make cheddar, ricotta, mozzarella, cottage and many other types of cheese right at home. Cheese can be made from cow, goat or sheep milk. Key ingredients in all cheeses are cheese starter culture and rennet to coagulate the milk. Milk can come from the store or straight from the cow. Equipment needed includes a pan to warm the milk, a curd cutter, a thermometer, a fine woven cheesecloth, and a cheese mold in which the curd can be pressed. Hoogmoed says cheese recipes are easy to follow. "It takes about 2¢ hrs. from start to finish to make Dutch Gouda cheese. Pressing takes 3 to 5 hrs. Then you store the cheese for about 3 weeks to let it ripen," shesays. Complete recipes are available for each cheese, as are complete supplies for each type of cheese.
